Blinded Me with Science
The five remaining chefs are in their own kitchen which has the most modern equipment, but they are not allowed to use any of the technology that they know well. They are asked to us a microwave for their quick fire and they are given 5 minutes to come up with a breakfast for two female comedians, Francis and Angela/Frangela. For $5,000, they have to make something hot.
Hugh shares that his family has a microwave in 1976, but some of his friends weren’t allowed to visit his house because of radiation fears. Naomi’s life has been microwave free. She looks for bacon, eggs and shallots. Tracy dumps the egg whites which she does not enjoy working with and saves the yolks. Tracy uses sliced bananas on her plate. Floyd is planning a bacon spinach soufflé. He is concerned about the eggs not cooking correctly.
Hugh predicts that no one will make a fantastic breakfast using the microwave, but the women love his bacon and he is delighted. Mary Sue and Floyd have been the finalists together in the quick fire 3 of the 8 times and Mary Sue wins again. Floyd is disappointed.
The chefs meet 5 scientists in lab coats because they will demonstrate scientific principles in the second challenge of the day.
They will study:
- Elasticity /Naomi/pizza dough
- Browning of food /Floyd/ beef milliard reaction (browning)
- Viscosity/ Mary Sue
- Acidity/ Traci/citrus acid
The chefs shop at Whole Foods and at the last moment, Floyd realizes that he doesn’t have his beef. Mary Sue has extra in her budget so he runs back and throws the order to Hugh who gets it to the check out with 4 seconds to spare. This was a group sport for charity.
They will use Bunsen burner for their heat sources and a variety of glassware used in high school science labs. Traci will work with tuna and lemon. She does not use the heat sources. The others have difficulties controlling the temperature of the heat source and there are concerns that they won’t be able to get the temperatures of the oils high enough.
Naomi makes pizza, a favorite food of high school students. The scientist talks about the glutens the different dough and they discuss the elasticity of melted cheese. Floyd has a science background with a Masters of Biochemistry, but he disappointed his father when he decided to become a chef rather than a physician or scientist. He wishes that he father could see the success that he has found as a chef. Floyd pouches beef with a special broth. Hugh has a tiff with his scientist when the scientist tries to do what he was asked to do by the producers and instruct Hugh in the science of emulsions. Hugh makes mayonnaise because kids like it and they don’t know that it is in fact an emulsion.
Naomi takes charge of her scientist who does everything Naomi asks. Naomi loves her scientist.
The three judges are James Oseland, Curtis Stone and Ruth Reichel. The guest judge is Padma Lakshmi.
The chefs meet in the dining area at tables where they instruct high school students in groups and serve the foods they created. The students are enthusiastic and they really like the pizza. The students learn and taste while discovering that both cooking and science can be fun.
Finally, the judges have mini lessons and taste the foods. James does not think Hugh’s concoction is a mayonnaise, but Hugh’s scientist defends Hugh and Hugh’s emulsion. Hugh served fried okra, tomatoes with fennel, and left over bacon from the quick fire challenge. (No, he probably made fresh bacon, he is a real chef. LOL) He uses a cornmeal breading that will be a problem with James.
Mary Sue taught viscosity by cooking and serving Dulce de leche, churros, chocolate mousse, and café’. She had concerns about using a beaker of greece, but it turned out OK.
Naomi taught elasticity by creating calzone truffles with mozzarella cheese, chanterelles, arugula and balsamic gelee. Ruth said it was gooey. Not good news for Naomi.
Floyd, the scientists and chef, made a spiced beef with mushrooms, asparagus, and fried potatoes. (I am still upset about Floyd cooking on top of a toilet while racing down a highway in a recreational vehicle a while back. Biochemists (Floyd) and Microbiologists (me) have issues when it comes to the public and food safety concerns. We are going to talk someday.)
The chefs stand before the judges who are sitting behind science lab tables. They love Floyd’s broth, but Mary Sue beats him again for first place. Padma loved Mary Sue’s viscosity test. (Padma is so intelligent. I am not surprised. She was married to Salman Rushdie.) Mary Sue’s charity receives $10,000.
Hugh, Traci and Naomi stand before the judges for elimination. Traci did not attempt to do more with the many acids found in their well-stocked kitchen. Naomi’s pizza bread and cheese were examples of elasticity before cooking, but after there were issues. Hugh did not make the grade and he was sent home with his knives. He encouraged the other to stay friends and be supportive of each other. I am going to miss Hugh. Hugh has won $15,000 for his charity.

Jill Zarin apparently read the blog about the Zarin Family Trust questions. Not only did I get an anonymous email that I will share right here (below) but she also changed the beneficiary of her auction from the Zarin Family Trust to The New York Community Trust. Isn’t that fascinating? Here’s the email that I received today:
You have one of the funniest blogs online!!! I love reading your blogs they are
hilarious!! I was hoping to dig up some dirt on the Jill Zarin trust after
reading your post but sadly I found out that is is legitimate. I did some
research and discovered that it is not a private trust for Jill Zairn at all, it
is a charitable fund that is managed by The New York Community Trust. The Zarin
Family Fund as it is called is a fund that is for charitable giving only and
part of The New York Community Trust.
I found out that this is something called a “Donor Advised Fund” and people set
these up when they give a lot of money to charity and want a team of advisors
who are experts in philanthropy to research the organizations that they want to
contribute to so they can be sure that they are giving to a legitimate
non-profit organization. I was hoping to uncover something more juicy but it
seems that Jill was smart in this instance and set up this as an informed way to
give her money to charity.
I called the New York Community Trust and found out that when people set up a
fund with them for charitable giving usually the fund is in the name of the
family, hence The Zarin Family Fund at the New York Community Trust.

This email was sent anonymously. I haven’t contacted the person named in the email and I don’t intend to, I’m guessing the author of the email was Jill’s assistant Darren or Darryl whatever his name is or one of her other minions. Allegedly.
That was a sad attempt at tying in Hugh Jackman with your stupid auction. I’m sure that I’m not the only one who noticed that Jill changed the beneficiary of her auction, it is no longer “Zarin Family Trust”. Fascinating!
Don’t forget to bid on Jill’s auction, but you’ll have to buy her dinner! haha
I really like it when Jill meets celebrities because we know how she acts and you just know these celebrities are absolutely mortified by her behavior. They probably treat her like a crazed fan and then get away from her as quickly as possible. Hugh actually looks a bit frightened. Jill’s plastic surgery is so obvious in this photo, poor Hugh.
I can only imagine this poor guy is thinking to himself, what the hell am I doing here with a Reality Show Housewife?
